After having two babies back-to-back, I was feeling the need to shave a little weight. In addition, I was dealing with post-partum depression. A friend recommended trying the keto diet, as it's reportedly great for brain health (and the waist-line!) Only problem? I'm vegetarian and I knew that a high-fat diet likely meant more animal products. I decided to give it a try anyhow. It wasn't easy and I found that I was hungry ALL THE TIME! Thankfully, I didn't have to limit my caloric intake, just my carbohydrates. It was especially hard when I was "on-the-go" to just grab something appropriate while I was out so I had to start planning ahead and packing some snacks in my purse and diaper bag.
I tried a number of keto-friendly snack bars but not all were very tasty (given the high fat and sugar alternative ingredients). I did make some delicious fat bombs but they melted if left out in my purse too long and became a mess.
One day, I was shopping at a local healthfood store and found these bars: Suzie's Good Fats bars. After reading the ingredients, I figured it might be a great solution to my limited snack options so I bought one of each flavour to try. I ate the peanut butter one in the car on the way home... it was so good! The perfect combination of salty and sweet. Not only was it tasty but it actually satisfied my hunger! Now that was a big win in my books.
I now frequently buy the chocolate mint bars (my favourite) and have them stored at work and will grab one mid-morning instead of eating breakfast or a snack and it's just enough to make it until lunch. LOVE these bars!
