I've used North Coast Naturals Pumpkin Protein before and loved it. North Coast Naturals Pumpkin Protein is also highly digestible.  I often hear people complaining that vegan protein powders make them feel bloated and gassy.  That's often the result of a prebiotic fibre called inulin, being added to protein powders, but you won't find any inulin here.  This Pumpkin Protein Powder is also gluten free, low allergenic, yeast free, free of sulfites, Non GMO, sodium free, has no artificial preservatives, and is sugar free.  This new version has some pumpkin spice added (which I found very mild) and is sweetened with a debittered stevia leaf extract, so no aftertaste!  Also super versatile and easy to use.  Mixes smoothly into ...well, ...smoothies, as well as oatmeal, cookies, muffins, or the Pumpkin Waffles or Pumpkin Cinnamon Buns I made.

Pumpkin Protein Waffles (or pancakes)

In large bowl, whisk together, 2 3/4C flour (I used a combination of organic spelt and oat flours), 1/4C Krisda Monkfruit Sweetener, 2 tsp baking powder, 1 tsp baking soda, 1 1/4 tsp pumpkin spice, 1tsp allspice, and 1/2 tsp ground ginger, and 1-2 scoops North Coast Naturals Pumpkin Protein.

In another large bowl, or bowl of stand mixer, combine 1 1/2C buttermilk (I used a plant based milk with 1Tbsp Maple Bee Nectar Honey Vinegar.  You can also use any organic apple cider vinegar.  Let sit 10min, then it's 'buttermilk'), 1tsp orange zest, 1/2 C freshly squeezed orange juice (or supplement with Kiju organic mango orange juice), 1C pumpkin puree, 1/2C local raw honey, 3 eggs, 1Tbsp North Coast Naturals Boosted MCT Cooking Oil (or melted organic coconut oil), and 2 generous tsp vanilla extract.

Gradually add flour mixture to the liquid, blending until smooth.  If you're not using a stand mixer, go ahead and add wet ingredients to dry if you prefer.  Let batter stand 5-10min. Then, cook waffles as per your waffle maker or, make pancakes. Enjoy!
