A little green cookie

Using Pure-Le Natural's Chlorophyll in a recipe that isn't green beer or a green smoothie! What a cool idea!
Usually around this time of year I'll make my kids shamrock shortbread cookies with some green food dye and some sprinkles, so a green chlorophyll cookie seemed like the perfect idea. Then I remembered, I also have Pure-Le Natural's MINT flavoured chlorophyll and that would make this cookie even better! Sure it's still a "cookie" but it's got the added bonus of chlorophyll and the kids can't tell.
I used my family recipe for shortbread
- 1 cup organic butter
- 3/4 cup icing sugar
- 2 cups organic unbleached flour
- pinch of sea salt
- 1/2 tsp of vanilla
- 2 tablespoons of Pure-Le MINT Cholorphyll
- 1 drop of green food dye (the chlorophyll made the cookies light green but kids wanted darker)
- added some sprinkles because the kids were standing beside me while I made this (kid pressure)
Mix, cut into shamrocks and bake at 325 degrees for 10 mins till bottoms of golden brown
Kids LOVED them. My son right away recognized the mint flavour and thought it matched the colour nicely.
