A delicious Vegan Pumpkin Protein that is easily digestible!

Holiday baking doesn’t have to be unhealthy. I really enjoyed making these pumpkin protein energy balls with Cold Pressed Pumpkin Protein by North Coast Naturals. This protein is only 90 calories a serving & contains zero sugar & has 17g of protein. The protein powder is smooth, & the pumpkin taste isn’t overpowering with hints of pumpkin spice, cinnamon, cardamon.
Here is the recipe for the protein balls:
1.5 cups of oats
1 cup of peanut butter
1/4 cup honey
2 scoops of protein powder (I used Cold Pressed Pumpkin Protein by North Coast Natural)
3 tablespoons of chocolate chips
1 tablespoon of coconut flakes
1 tablespoon of hemp hearts
1 teaspoon of maca powder
Mix altogether (I added a splash water as it was a bit dry)
Roll into balls & enjoy!
