I had never heard of Tigernuts before and, having nut in the name, you would think that they were a nut, but they're not. They're actually a tuber, meaning they grow in the ground like potatoes. Tigernuts are high in potassium, vitamin E, phosphorous, magnesium, iron and zinc and are one of the most fibre-rich Superfoods found in nature. Cool! Aside from being nutrient rich, Tigernuts can help to improve digestion, lower/control blood sugar levels, improved heart health, and boost your immune system. This is a great alternative for those living a nut free life! Did I forget to say that the Tigernut bits are organic?! Nah! What else could I teach you about this product? Well, the product is keto-friendly, vegan, kosher, GMO-free, and gluten-free, nut-free and raw.
The uses for it are endless too. It can be ate straight from the bag, added to smoothies, oatmeal, yogurt, baking, salads, et cetera.
Wait, what about the taste you may ask?! Well, Tigernuts have a sweet, almond-like taste, but the texture is different. Who would have guessed!
I cannot recommend this nut alternative enough!
Sweet Potato and Peanut Butter Doughnuts
*2 cups Ecoideas Sweet Potato Flour
*1 Tbsp baking powder
*1/2 tsp salt
* 1 tsp ground cinnamon
*3/4 cup butter, softened
*1 tsp vanilla extract
*Vegetable oil for brushing
*PB & Me Powdered Peanut Butter (chocolate and/or original)
*Ecoideas Tigernut Bits (sprinkled)
Preheat oven to 400 degrees Fahrenheit.
In a bowl, wisk sweet potato flour, baking powder, salt and cinnamon.
In another bowl, beat butter and sugar. Beat in vanilla extract and eggs. Add milk.
Slowly mix and combine dry and wet ingredients.
Lightly brush doughnut mold with oil.
Add mixture to the mold.
Bake 10-12 minutes. Cool.
