Raw Pesto Recipe inspired by the gorgeous green of pure pistachio

Rich, creamy and nutrient packed - healthy fats, great source of iron. When I opened the jar and saw that beautiful green from the pure, nothing else, Pistachio Butter, I was inspired to spiralize some zoodles for some Pesto magic. To preserve the integrity of their, since 1920, cold stone ground method, I decided to make a raw no cook meal, I added nutritional yeast for that cheesy flavour, the Pistachio butter is so creamy and flavourful, no one will notice it’s non-dairy.
Just mix and toss together with some zucchini zoodles, it was a quick easy meal to prepare.
- * 1 tbsp avocado oil
- * 1 tbsp Organic Pistachio Butter
- * ½ tsp nutritional yeast
- * 1 tsp minced garlic
- * 1 tbsp chopped basil leaves
- * Optional: garnish with red onion slices
Salt and pepper to taste
Toss well with 1 cup of spiralized veggies or cooked noodles of your choice
