Cassava Flour - Gluten free Bread

Cassava flour is a great alternative for people who are on a gluten free, nut free or on a paleo diet. It has a very similar consistency to all-purpose flour but it is lighter which means baking with it can be tricky given that it absorbs more liquid. Just like any recipe, you make substitutions and experiment a little to find the perfect amount for each recipe. Cassava is high in resistant starch, (a type of starch that bypasses digestion and has properties similar to soluble fiber). Resistant starch feeds the beneficial bacteria in your gut, which may help reduce inflammation and promote digestive health! 

Here I made a delicious gluten free bread that I can comfortably enjoy given i'm on a very restrictive diet while healing my autoimmune condition. I topped it off with almond butter, honey and cinnamon making it a great dessert snack. Check out the recipe below:)

1 1/2 cups of cassava flour

2 Tbsp arrowroot powder

4 Tbsp coconut flour

1/2 Tsp baking soda

1 Tsp baking powder

1 Tsp salt

1/4 Cup vanilla coconut yogurt

1/2 Cup warm water

1/2 Tsp apple cider vinegar

5 large eggs (or use flax eggs if you want it to be paleo/vegan)

Whisk eggs on a high speed so they are nice and light. Slowly fold and kneed in the rest of the ingredients. Bake in a preheated oven at 180 degrees for 40 minutes. Allow to cool down completely before slicing!
