Worried about eating unhealthy treats and feeling sluggish and guilty after? When i eat regular brownies made with sugar i experience a sugar crash, thats because sugar spikes your blood glucose levels causing you to experience fluctuations in energy. Lakanto monk fruit could be the alternative you have been looking for. With zero calories and carbs or glycemic index, it will not raise your blood sugar levels like regular sugar does. This is great news if you have diabetes or hypoglycemia. Use it on a 1:1 ratio to sugar so instead of 1 cup of sugar use 1 cup of Lakanto. If you ask me it tastes better than sugar.
I decided to make brownies with mine...what will you make with yours?
Brownie recipe: 2/3 cup almond flour, 2 tbp unsweetened coco powder (Frys), 1/3 cup Lakanto monk fruit sweetener, 1/2 spoon baking powder. 5 tbp coconut oil, 2 tbp chia seeds (with 4 tbp water- let sit for 10mins, sugar free chocolate chips (Pascha unsweetened choc chips)
Method: Pre heat over 350 degrees faranheit, line you tin with parchment paper. Prepare your chia egg and leave to sit for 10 minutes, In a large bowl, add almond flour, lakanto sweetener, coco powder, baking soda and set aside. In a microwave proof bowl add chocolate chips and coconut oil- heat for 30 seconds at a time until melted no more that 30 seconds each time or chocolate will burn. Pour melted chcolate into the dry mixtre then stir in chia eggs, add chocolate chips or additonal items if desired. Transfer brownie mixture to your tin and bake for 20-25 minutes.
Then serve how you like- I had mine with dairy free ice cream. Bon appetite!
