A Delicious Sugar Replacement!

Mother's Day marks a special day on the calendar in my home! My family is very tight knit and consists of 3 generations of moms who all live in close proximity. Every Mother's Day my family gets together and does a potluck style brunch to celebrate all the amazing women in our lives. This year, however, much like the rest of the world, we had to improvise and couldn't get together on the Sunday for brunch like we usually do. I decided to still try and make my mom and grandma a sweet breakfast treat to show them how much I appreciate them, not only on Mother's Day... but everyday!
My mom has an incredible sweet tooth but also cares about her health and likes to indulge in healthier-for-you sweets. My grandmother is diabetic so she has to watch her sugar intake very carefully. I was lucky enough to get to try the Pineapple Pleasure and Opulent Orange flavours of Flavorall Stevia Liquid, and put them to the test in one of my all time favourite brunch menu items... baked oatmeal! Baked oatmeal is a weekend staple in our household due to the endless amount of mix in possibilities and flavour combinations. My mom loves tropical flavoured foods, desserts and drinks so I knew that she would love the addition of the Pineapple and Orange zero calorie sweeteners, and I knew my grandma would appreciate the fact that they are diabetic friendly.
Here is the recipe for my Tropical Oasis Oatmeal Bake:
2 cups of Old Fashioned or Instant Oats
1/2 tsp of Baking Powder
1/2 tsp of Salt
1/4 tsp of Opulent Orange Flavorall Stevia Liquid
1/4 tsp of Pineapple Pleasure Flavorall Stevia Liquid
1/3 cup of Melted Butter or Margarine, cooled.
2/3 cup of Milk (I used 2%)
1/2 cup of Greek Yogurt (I used Vanilla but plain works just as well!)
1/2 tsp of Vanilla Extract
3/4 cup of Crushed Pineapple
1/4 cup of Mandarin Orange Slices (I used canned and cut them into bite sized pieces)
1/2 cup of Sweetened Coconut Flakes
Preheat oven to 350.
Combine the oats, baking powder and salt in a medium sized bowl and mix together. In a separate, larger bowl, beat the eggs, melted butter, milk, Greek yogurt, vanilla extract and the orange and pineapple Flavorall stevia liquids. Whisk together until incorporated. Add the dry ingredients to the wet ingredients and stir until the oats are fully coated and well combined. Stir in the crushed pineapple, mandarin orange pieces and coconut flakes.
Pour the oatmeal mixture into an 8x8 greased baking dish or into 6 individual greased ramekins. Bake at 350 for 30-40 minutes or until an inserted knife comes out mostly clean. I baked mine for 35 minutes in ramekins but it will depend on the size of ramekin you are using. Remove from the oven and let rest for 5 minutes before serving. Top with whatever flavourings you desire. Some of our favourites are a dollop of Greek yogurt, crushed pineapple, sliced bananas, maple syrup, coconut flakes, brown sugar and milk. The possibilities are endless... ENJOY!
I dropped off the individual ramekins for my family members, unbaked, and allowed them to cook them themselves and top them as desired by providing them with baggies and containers of a variety of topping suggestions. The smell of these baking is absolutely mouth watering and is the first taste of the deliciousness that is coming. My mom, grandma and sisters all topped theirs differently and sent me messages saying how much they enjoyed them. They could not believe that there was no processed sugars! The Flavorall adds the perfect dose of sweetness without any bitter or artificial aftertaste.
