Sweeten and Flavour all in one step!

I recently received Ecoideas Ginger Coconut Sugar and I absolutely LOVE it! I have so many recipes that call for ginger, and this all-natural sugar also contains organic ginger. I used this to sweeten a curry I made and it added that hint of sweet and spice all at the same time.
As a Mom of three, I'm always looking for ways to save time when cooking and this is the ultimate two-for-one.
To make my curry, I used the following ingredients:
1 tsp coconut oil
1 onion, chopped
3 carrots, chopped
2 sweet potatoes, peeled and chopped
1/2 cup broth/water
1 handful asparagus, ends removed and chopped
1 can chickpeas, drained and rinsed
1/2 cup sweet peas
1 handful spinach
For the curry sauce:
1 can full fat coconut milk
1 tbsp curry powder
1 tsp tumeric powder
pinch red pepper flakes
2 tsp Ecoideas ginger coconut sugar
salt and pepper to taste
I cooked the onions in some coconut oil and added the chopped carrots and sweet potato.
I added some broth (you could add water) to let the vegetables cook down a bit more.
I then added the curry powder, tumeric and red pepper flakes and let that cook another minute or two.
Add in the coconut milk, sugar, salt and pepper, chickpeas, and asparagus.
Once everything is thoroughly cooked and the sauce is thick, I added the peas and spinach, just to wilt.
Serve over rice and enjoy!
