High fiber flour!

I love trying new things and baking with flour substitutes has become a fun new hobby during these days of Covid-19 quarentine. I decided to try Ecoideas lupin flour in my peanut butter cookie recipie.
Ecoideas Lupin flour is harvested from european white lupins and does not have a bitter taste. This also packs a pretty powerful nutritional punch, theres 5g of fiber and 40% of your daily vitamin E per 2 tablespoons.
Peanut Butter Cookies (3 ingredients)
1/2 cup of Fatso Peanut butter1/4 pure maple syrup3/4 cup of Ecoideas Lupin flour
Combine the peanut butter and maple syrup in a bowl and mix until smooth, slowly add the flour and stir until combined. Roll small balls (about 1 tbsp each) and place on a cookie sheet, you can flatten with a fork if you wish, bake at 350 for 12-15 minutes.
