Vegan Pumpkin Pie
Add 1 cup of coconut milk, 1 can of Farmers market organic pumpkin purée, 1/2 of maple syrup, 2 tsp of pumpkin spice, 1 tablespoon of cornstarch to a blender and mix until smooth, pour into your favourite pie crust and bake at 350° for 1 hour. Let it cool for 20-30 min and refrigerate over night before serving.
