Add some gogi berries to your kale salad for extra antioxidants!

I like adding gogi berries to my kale salads. They provide a great source of antioxidants for your eye health and skin. They soften  up a bit when you let them sit in a kale salad for a bit. You can eat them by themselves or put them in a homemade trail mix too.  I'm sharing my Kale Salad Recipe with you here if you want to try them out in a salad.

I basically take a head of kale and wash it and then cut it up into bite size pieces and put it in a large salad bowl.

*Add 1/4 c pumpkin seeds, 1/4 c goji berries and about 10 halved cherry tomatoes  to the bowl.

 Dressing: 

1/2 cup olive oil, 1/4 tsp seasalt, 1/4 tsp black pepper, 1 clove of crushed fresh garlic, 1 tblsp fresh squeezed lemon juice, 1 tblsp balsamic vinegar,  1 tblsp maple syrup  Place all of these into a shaker cup and shake it up.  Pour over top the kale salad. Scrunch it all up with your cleans hands so that the kale and seeds and gogi berries are covered. 

(You really need to work the dressing into the kale as it breaks it down so that it is easier on your digestive system). Let the salad sit for about a half hour so all the flavors can mingle and then serve. Enjoy!
