love using tahini for sauces!

One of my favourite weeknight dinners are quinoa/rice bowls. They are great because you can prep most of the ingredients ahead. In this bowl, I used a rice base, topped with purple cabbage, kale, tofu, and chickpeas. My favourite tahini dressing lately is a mustard one - it is so tangy and so good! I mix roughly equal parts of yellow mustard and tahini. I add in a dash of red wine vinegar, salt, and water to thin out to desired consistency. I have been putting this sauce on everything lately. You need to try it - I promise it will not disappoint!
