Coconut Oil is a STAPLE in my cupboards.

I never let myself run out of coconut oil because it is SO versitile. I love to use it to cook & bake with. When baking I often sub out other ingredients and use coconut oil in it's place since I am vegan & gluten-free. 

This heatwave that we’ve been experiencing means it isn’t exactly ideal to turn on the oven, but that doesn’t mean we have to sacrifice our sweet treats! These fridge/freezer no bake chocolate covered maple almond cookies are just what you need in your life.

Ready in no time - just mix the following ingredients and then form dough into cookie shapes on a baking sheet and place in the freezer to firm up:

3/4 cup almond butter 

1/2 cup almond flour 

2 tbsp coconut flour

2 tbsp maple syrup 

splash vanilla

pinch cinnamon 

Melt 1/2 cup of chocolate chips (love @enjoylifefoods) & 1 tbsp coconut oil (of course I used @silkenycoconutoil). Remove cookies from the freezer and dunk them in the chocolate until coated - shake the excess off and place back on the pan. Sprinkle with sea salt & re-freeze for later or enjoy as is!

This recipe is packed with lots of good fats!
