Farmaroot Canadian Ginseng - Sweet Potato Apple Ginseng Soup

Covid has been such a crazy time. We’ve all been forced to stay inside longer than we’d like. One of the things I’ve been able to take from away from Covid, is trying new recipes with my family. We’ve been spending so much time in the kitchen together. It’s been really nice.
Instead of baking this afternoon, we’ve gone ahead and made some soup for this chilly day. Since Covid is circulating more and more, we’ve added in some extra beneficial ingredients.
@Farmaroot Canadian ginseng is literally beneficial for every part of your body. From preventing colds and flus, to stimulating your immune system and even preventing blood clots, this root is know as the superhero “man-root”.
So we had to add it into this delicious recipe for the extra oomp to your systems. 🍲
Wanna make this sweet potato, apple, ginseng soup for yourself? Here you go:
You will need:
1 white onion
2 tablespoons olive oil
3 teaspoons grated fresh Canadian @farmaroot ginseng
450 grams sweet potato (peeled, cut into pieces)
1 large Apple 🍏
chicken stock (1 lt.)
In a skillet, saute the onion with the olive oil for 5 minutes, add ginseng and sweet potato, cook and stir for 6/8 minutes.
Add 1 apple cut into pieces . Cook for 2/3 minutes.
Add the chicken stock. Season with salt and pepper if you like.
Cook - covered - for 15/20 minutes, until vegetables are tender.
Mix in the blender, gradually adding the broth to reach the desired consistency.
Return to the stove, cook on low for 2 minutes just before a boil. Serve ♥️
