Canadian Ginseng is an adaptogen used in herbal medicine to help relieve nervous dyspepsia and aid digestion in cases of nervousness and stress. It especially restores energy levels for those who suffer from physical and mental exhaustion. During this pandemic we are all dealing with stress and exhaustion so this is great to have regularly on hand to boost immunity, brain function, and reduce oxidative stress in the body. It also contains ten times more of the ginsenosides (its main active constituent) responsible for central nervous system anti-stress activity in comparison to Asian ginseng. Both the ginsenoside and polysaccharide constituents in ginseng have also been shown to promote healthy blood sugar levels!

I infused the ginseng into a tea to make it the base liquid for the broth I put into my soup. To do this I added 3 grams of ginseng to 3 cups of water and boiled it for 30 minutes. I strained the ginseng from the liquid and added 2 vegetable stock cubes and mixed it together.

Pea soup ingredients:

- 2 tbsp of olive oil

- 2 onions

- 4 garlic cloves

- 2 cups of frozen peas

- 2 medium zucchinis

- 3 cups of ginseng vegetable broth

- 2 cups of chicken broth

- salt and pepper to taste

Instructions:

1) Heat oil in a large pan and add the onion and garlic once hot

2) Cook on low heat stirring occasionally until softened (about 10 minutes)

3) Add the green peas, zucchini, ginseng and vegetable broth

4) Bring to boil then simmer on low for 10 minutes

5) Turn off heat, let cool then pour into blender until completely smooth6) Transfer the soup back into the pan and add seasoning to your liking
