🥗 Ginseng Walnut Mango Salad

Have you heard of ginseng? 

It's an herb commonly used in Traditional Chinese Medicine and falls into the category of an "adaptogen". These are herbs that help the body "adapt" to our daily stresses - physical, chemical, biological and psychological. Winter is an ideal time to be consuming ginseng because it helps strengthen your immune system so that you are less likely to get sick during cold and flu season.

Growing up eating my family's traditional Chinese dishes, ginseng was a common ingredient used in cooking. It's most often used in soups and stews, but properly preparing the ginseng can be a time consuming process. Most people have never eaten ginseng simply because they don't know how to use it in their cooking 🤷‍♀️.

 To demonstrate how easy it is to incorporate ginseng into your diet, I decided to share a super simple recipe with you.

🥗 Ginseng Walnut Mango Salad

- 1 small root of dried ginseng - finely chopped (I used Canadian White Ginseng from Farmaroot)

- 1 cup of walnuts - toasted and halved

- 1 red mango - diced or sliced into thin strips

- 10 oz baby spinach

- (optional) 5 oz feta cheese

 Add all ingredients into a bowl and toss. That's it! This recipe literally took me 10 minutes to prepare. The bitterness of the ginseng adds a depth to the salad and brings out the sweetness in the mango. I like eating this salad without any dressing, but if you prefer you can add any type of dressing that uses balsamic vinaigrette as a base.
